3 Ingredients! Easy Camping Dinner

OMG, an easy camping dinner with only three ingredients? When it comes to camping meals, simple is usually better. This meal is easy to prepare, healthy, and requires minimal cooking equipment. And did we mention it is delicious? You can read on to discover this easy camping dinner recipe, perfect for outdoor cooking while camping and travelling.

3 Ingredient grilled chicken and slaw recipe; all you need is:

  • 4-6 chicken thighs (depending on the number of people eating)
  • Seasoning (Moroccan seasoning, herb and garlic seasoning, or seasoning of your choice)
  • 500g slaw kit from the supermarket salad section

You can maximize your time exploring and finish the day with an easy meal full of flavour, best cooked over an open flame or on the BBQ.

On a Friday afternoon, we pull into Auburn River camping ground, a National Park camping area near Mundubbera in Queensland. Set amongst western hardwood forest dotted with Queensland Bottle Trees and native grasses covering the ground below. Honeyeaters hop through the trees above, and Kookaburras laugh loudly in the distance.

A short distance away is the Auburn River Gorge featuring massive granite boulders and rock pools. The next day we look forward to exploring and enjoying this unique area via the walking trails from the campground.

But it’s time to prepare an easy camping meal!

We have made this meal occasionally, and it’s always well enjoyed. The best part is grilling the chicken over the fire pit on a rack. This adds a smoky flavour, and the flames caramelize and render the outside of the chicken.

Start by preparing the chicken thighs. Unfold the thighs and use a bottle or your fist like a meat mallet to slightly flatten out the chicken; this allows for even cooking. Generously season and rub the chicken (like a dry marinade) and set aside, allowing the seasoning flavours to infuse into the chicken.

In a large bowl prepare the slaw kit. Set aside.

How to make easy camping meals over a fire…

Meanwhile, get your fire going. Build a fire from sticks up to small logs and allow the fire to burn, then die down slightly, ensuring you have good coals and flame, not a raging fire! (If you can’t access a fire pit, use a BBQ or a frying pan.) After all, recipes need to be adaptable when cooking outdoors.

Oil the grill and place it over the fire pit, ready for your chicken. Place the chicken on the grill and cook for 5 to 8 minutes on each side. Check if the thighs are cooked by inserting a knife in the thickest part, and if the juices are clear, it is cooked.

Remove chicken from the grill, and allow to rest for around 5 minutes. Thickly slice the grilled chicken and serve over the slaw.

Now let’s make it:

  • Unfold chicken thighs and flatten them slightly with a bottle or your fist so they are an even thickness for cooking.
  • Season well with your choice of seasoning and set aside.
  • Build your fire.
  • In a large bowl prepare the slaw.
  • Oil the grill. Add seasoned chicken thighs and cook for 5 to 8 minutes on each side.
  • Check if the thighs are cooked by inserting a knife in the thickest part and if the juices are clear it is cooked.
  • Serve the chicken thickly sliced over the slaw.
  • Optional: serve on soft wraps with chili sauce.
