Remove the shanks from the camp oven, place to the side, and cover with alfoil to keep warm.
Step 5 – Add the chopped onion, carrot, celery, garlic and rosemary to the camp oven. Stir and cook until the vegetables soften.
Step 6 – Add the wine and stir through, allowing the wine to deglaze the camp oven.
Step 7 – Return the lamb shanks to the camp oven and add the stock. Ideally, the stock should cover the shanks from halfway to almost covered. Place the lid on the camp oven. If using baby potatoes, add them to the camp oven.

Step 9 – Place the wrapped potatoes into the coals turning after 20 minutes. Allow to cook for another 20 minutes or until a fork can pierce them.
Step 10 – For a fall-off-the-bone lamb shank, add 1/2 a shovel of coals to the bed of coals and new coals to the lid after the first hour. Allow to cook for an additional hour. Low and slow. Use welders gloves to remove the camp oven lid when cooked.
