It doesn’t get much better than a wholesome curry for an easy camping meal. The warm, spicy, fragrant aromas drifting through camp are enough to have neighbouring campers want to join your camping dinner plans! Apart from the satisfaction a curry brings to mealtime, above all, it’s an easy camping meal to cook and prepare for small or large groups. So, join me as I show how to master this delicious fall-apart lamb curry!

Setting The Scene For An Easy Camping Meal!

Unusually, the weekend leading up to Christmas somehow had a window of opportunity. When these windows appear, they need to be utilised! A camping weekend it is – and I even have a new place in mind!

Setting off on this window of opportunity, the road leads us to the Cooloola Coast. With the joy of leaving the blacktop, the tyres went down, and the sandy bush track led us to the bay-side campground. Here we were met with uninterrupted views across the Tin Can Bay inlet while snagging a total waterfront spot. The sandy white beach and clear blue water were so inviting that the only way to spend the afternoon was in the cool salty water. As the sun set, it put on a show, giving us an unforgettable display of colour across the bay.

Why Curry is the Ultimate Easy Camping Meal

While I think this was actually my first time cooking a curry at camp, it left me wondering why I haven’t done this sooner? It’s incredibly simple, uses limited cooking equipment, and delivers a truly wholesome and delicious meal. I chose lamb neck from the freezer—a cut that’s ideal for slow-cooking until the meat falls off the bone.

Additionally, the ingredients are versatile and can be made with any type of protein or vegetables. Serve the curry with rice, naan, coriander, yoghurt or neither of these!

Fall Apart Lamb Curry Recipe: Easy Camping Meal

While the ingredients can be altered for this recipe, I am creating a step-by-step guide to the bay-side sunset curry! Serves 4 to 6 people.

  • 1 onion diced
  • 1 medium-sized carrot, diced 
  • 4-6 washed potatoes (or sweet potatoes) diced
  • 500g of lamb neck (or lamb on the bone: chops, shanks, etc.)
  • 1 can chopped tomatoes
  • 1 small can of coconut cream
  • Curry Paste (choose mild yellow curry or something spicier)
  • Cooking oil
  • Salt and pepper
  • A pack of microwave rice or naan bread

Cooking Equipment List:

  • Camp oven or large pot
  • Chopping board, knife, wooden spoon, tongs, bowls and spoons
  • Cook on: gas, induction or campfire

Step-by-Step: Cooking Your Easy Camping Meal

Step 1 – In the large pot over the heat, add a generous dash of cooking oil. Season the lamb with salt and pepper, then add it to the pot in batches and cook for about 2 minutes on each side. Once the lamb is slightly browned, remove it from the pot and set it aside for the next batch. Depending on the size of the lamb cuts, you may need to do two or three batches.

Step 2 – With the lamb aside, in the same pot, add more cooking oil if required, along with the diced onion, carrot, and potato. Sauté the vegetables until they soften, about 8-10 minutes.

Step 3 – Add the curry paste, stir through the vegetables for about one minute.

Step 4 – Add the canned tomatoes and coconut cream, stirring to combine and heat through. Once the curry mixture is heated and begins to bubble slightly, add the lamb back to the pot.

Cook’s tip: The lamb needs to be covered in the curry sauce. Add ½ or 1 cup of water if needed to cover the lamb, stirring to combine.

Step 5 – Turn the heat to LOW, and allow the curry to simmer with the lid on (or lid offset) for up to one hour. Stir occasionally to ensure the bottom of the pot does not stick or burn.

Step 6 – The lamb should be soft and tender, and falling off the bone. If the lamb cuts are larger, it may need longer to simmer. Serve the curry with hot rice or naan.

Tips for Storing and Reheating Your Curry on the Road

Packing: Curry always tastes better the next day! Store the leftover portion in a secure, leakproof container for an even easier camping meal tomorrow for lunch or dinner!

Safe Cooling: Don’t put a hot curry straight into your fridge; it will kill your battery or melt your ice. Let the curry cool for about 20–30 minutes first.

Reheating: To reheat, add a tiny splash of water or coconut milk to the pot to prevent the spices from catching on the bottom. Stir occasionally over a low flame until heated through.

Curry Jaffles: If you only have a little bit left, use it as a filling for campfire jaffles! It’s a classic Road Trips Australia way to make sure nothing goes to waste!
