With Christmas comes Summer, and with Christmas comes holidays! This prompted me to find and book the perfect summer camping location. The cascading Christmas Creek is set below the rugged ranges of the scenic rim, about 96 km south of Brisbane. Yes, Christmas Creek at Christmas time, it can’t get much more appropriate! We enter the privately owned Cattle Station (HipCamp) for an idyllic private creek-side camping location.
We position our camper in a shady spot surrounded by thick She-Oaks and Tall Eucalypt trees. The flowing creek fills our camp with tranquil sounds, and the clear rock pools invite us to spend an afternoon in their cool waters. What an excellent way to spend the afternoon.
After cooling off in the pristine Christmas Creek, it’s time to make an easy camping meal. As mentioned, I am transforming Christmas leftovers: Thelma’s Roast Prok into a delicious Nachos feast cooked in our campfire amidst our incredible creek-side natural surroundings.
What You Need to Make This Easy Camping Meal
- 1 packet of lightly salted corn chips.
- Grated cheese.
- A handful of cherry tomatoes halved.

If cooking on gas, ensure the heat is medium to LOW heat, ensuring the Nachos heat through and do not burn.
- Hardwood fire coals, or charcoal bricks, heated. (Alternatively, use a gas stove)
- Lighter or matches.
- Camp oven with trivet.
- Baking paper.
How to Make an Easy Camping Meal: Campfire Nachos
Step 1—Light your fire in a fire pit and create hardwood coals for cooking. Have the camp oven ready, and place it on the coals 15 minutes before cooking the Nachos to heat the oven.
Step 2 – In a bowl, combine the cherry tomatoes, black beans, roast pork (or cooked meat) and the jar of taco sauce. Mix until all ingredients are coated in the sauce.
Step 3—To make individual Nachos, Place two handfuls of corn chips on a piece of baking paper. Sprinkle with grated cheese. Top with two to three spoonfuls of the pork mixture, spreading the pork mixture over the corn chips and topping with grated cheese. Repeat this process for the number of people eating, or create a larger Nachos to share.
Step 4—Place the Nachos on the baking paper in the heated camp oven. Top the camp oven with a small shovel of coals. Cook for approximately 15 minutes until the Nachos are heated through and the cheese is melted. Repeat the process for the number of people eating.
Step 5 – Remove the Nachos by gently lifting the baking paper holding the Nachos from the camp oven. Place the Nachos on a plate and top with the guacamole and sliced lettuce. Enjoy!
