Camp Oven Roast Lamb Recipe: with Root Vegetables

There is something about cooking on an open fire that is much more rewarding than cooking on an everyday kitchen appliance. Starting the cooking experience in a scenic outdoor setting, roaming around collecting leaves and sticks, building a fire, and lighting the fire. Gathering and sitting around the open fire, enjoying nature as the smell of roast lamb drifts through camp. Producing a great meal with no electricity. Bringing forth a meal that is moist, delicious, wholesome, smoky, and even has leftovers…

This camp oven roast lamb recipe is our favourite and a regular dish on camping or touring trips. Having perfected a cooking technique to produce this excellent moist roast lamb and vegetables. It is an easy dish if you allow the time for coals and cooking time to cook in the camp oven.

Usually, I make a classic marinade made of garlic cloves, fresh rosemary sprigs, and olive oil seasoned and smashed together. Spread this marinade of goodness over the lamb to marinate overnight or longer in a zip-lock bag. (This can be done before leaving home for your journey). However, any seasoning you have is good. A deboned lamb is much easier to slice once cooked, and a 1.5 kg cut fits in a camp oven well, allowing for room for vegetables (depending on camp oven size).

What You Will Need to Cook Camp Oven Roast Lamb:

  • Camp oven with trivet.
  • Shovel for coals.
  • Good hardwood for the fire (alternatively use heat beads or quality charcoal chunks).
  • Lighter and kindling.
  • Welders gloves.

Camp Oven Recipe:

  • Produce fire with hardwood coals; this usually takes 1 hour or more.
  • You can choose a location next to your fire where a base of coals can be placed with the shovel, and put the camp oven on top of the coals.
  • Place the Lamb in the camp oven, and use a trivet to keep the Lamb and vegetables off the camp oven base. Place on the lid, and shovel coals onto the camp oven lid.
  • Change coals every 1/2 hour (this varies based on the quality of the wood and coals). Remove the camp oven lid with welders gloves and pour off the old coals. Shovel on new coals to the outside base and lid. (the amount also varies based on the quality of the coals.)
  • Cooking times are approximately 1.5 hours to 1.5 kg of lamb.
  • I want to point out that booking times will vary on wood type and the number of coals used; be open with the number of coals. An infrared thermometer can be a handy tool to indicate camp oven temperature.

For the Roast Lamb Marinade:

  • 4-6 garlic cloves, 2-4 sprigs rosemary, 60 to 100ml olive oil, salt and pepper, smash together to make a paste.
  • Or Masterfoods Garlic and Herb Seasoning rubbed into the meat.

Marinated Camp Oven Roast Lamb Recipe: Serves 4-6.

  • 1.5 kg rolled roast lamb leg or shoulder (bone removed).
  • 4-5 kipfler potatoes (or baby potatoes) whole.
  • 4-6 baby carrots, whole.
  • 2-3 small, sweet potatoes.
  • Olive oil, salt & pepper.
  • 3/4 cup stock or white/red wine or beer.
  • 2 tablespoons of flour (optional, to make gravy).

Let’s Make a Wonderful Roast Lamb in a Camp Oven…

  • Start your fire 1 – 1.5 hours before the start of cooking.
  • Remove the lamb from the fridge and allow it to warm slightly from the fridge temperature.
  • Wash vegetables and cut large vegetables in half long ways if needed. Place the vegetables in a bowl, drizzle with olive oil, and season with salt & pepper. Set aside.
  • Once coals have formed, add lamb to the camp oven. Shovel a base of coals for the oven to sit on, place oven on coals & top lid with coals & allow to cook. Top up & change coals every 1/2 hour. (Allow approximately 1.5 hours total cooking time, based on a 1.5 kg roast.)
  • Add seasoned vegetables to the camp oven after 45 minutes of lamb cooking.
  • At about 1.5 hours, the roast and vegetables will be ready if your coals have been hot enough. To check your meat and vegetables, pierce with a knife to ensure the juice runs clear and the vegetables are soft. Cook for longer if needed.
  • Remove the roast and vegetables from the camp oven. Cover with aluminium foil to rest while the sauce is made.
  • To make gravy: Place camp oven with cooking juices on a gas stove or coals, and add two tablespoons of flour, stirring with 3/4 cup of stock to make gravy. Alternatively, skip the flour and add 1/2 cup of stock or wine to reduce over 15 minutes to make a jus-style sauce.

Serve the sliced roast lamb, vegetables, and gravy/sauce. Enjoy in your camping chair under a starry sky by the fire.
