I first made this camping breakfast at Jervoice Station near Greenvale in North Queensland. The remote station is set along Dry River, which feeds the mighty Burdekin River, which eventually winds its way to Burdekin Dam. Visiting this area is a welcome change from the bustling city of Townsville. The drive beyond the ranges of Townsville offers a scenic undulating landscape dotted with cattle grazing among blue gums and ironbark.

After a three-hour drive, we arrived at the station house and were directed to our tree-surrounded private camp, perched above and overlooking the sandy riverbed. We were lucky there was a good wet season, and the river showcased clear flowing water with a deep waterhole just up from camp. After an afternoon of exploration of the river, the sky filled with brilliant colours of orange, pink, and purple, the vibrancy of colours mirrored off the water of Dry River. What an excellent way to end the day!

The morning bird calls filled the camp with sound and encouragement to get up and enjoy the day. The day’s first order is freshly pressed coffee, followed by a delicious breakfast.

4 Easy Steps to Camping Breakfast: Noodle Omelette Recipe

I originally came across this recipe in a Woman’s Weekly cookbook. The recipe has evolved and changed over the years to the ingredients I have. This dish is flexible to various ingredients and can be made as a quick and easy camping dinner.

What You Need to Make This Camping Breakfast:

  • Noodles (use thin rice noodles or 2-minute noodles). One pack of 2-minute noodles is suitable for making two omelettes or a handful of cooked/soaked noodles per omelette.
  • Eggs (use two eggs per person)
  • Baby spinach (1 x 250g pack): alternatively use Asian greens or stir fry mix vegetables. Note: Baby spinach is quick and easy.
  • Dash of milk or coconut milk.
  • Dash of soy sauce.
  • Chang’s Crispy Noodle dressing to serve.
  • Chilli Sauce to serve (optional).
  • Cooking oil, like rice bran oil or sesame oil.

Step-by Step Camping Breakfast Recipe

Step 1 – Boil water to soak the noodles:

Place noodles in a bowl, cover them with boiling water and allow them to soak for 1 to 2 minutes or until softened. The noodles will finish cooking in the omelette. Drain off the water, keep the noodles covered and place them to the side.

Step 2 – Mix the eggs:

In a bowl, mix the eggs, allowing two eggs per person. Add a large dash of milk and a dash of soy sauce, approximately 60 ml each of milk and soy sauce.  Mix well.

Step 3 – Stir-fry:

Heat a frying pan with oil. Place two handfuls of baby spinach/greens/vegetables in the pan and allow to wilt while stirring. Baby spinach is the fastest option as it wilts quickly. Add 1 to 2 handfuls of noodles and stir-fry them with the greens for 5 seconds. Flatten out the noodles and pour over the egg mixture. (About 2 eggs or half a cup of the egg mixture).

Step 4 – Cook the omelettes:

Place the frying pan on low heat and cover the pan with aluminium foil, allowing the omelette to cook through. This may take about 5 minutes, depending on the thickness of the egg and the heat under the pan. Be careful not to burn or overcook the bottom. Optional: Flip the omelette to finish cooking the top side. When the egg is set and cooked, place the omelette on a plate and drizzle with the sauces: Chang’s Crispy Noodle dressing, soy sauce and chilli sauce.
